Nachos For A Rookie Or A Guru!

So I love nachos and usually just pile stuff onto some chips and eat away.  But had some nachos at a restaurant that made each chip like a mini nacho tostada.  So I thought I would try to make some like it and I was not let down.  Here are my nacho adventures...

Step 1 - Make Your Own Tortilla Chips

I did this by taking corn tortillas from the grocery store, coating one side with canola oil and then cutting them into fourths.  I put some oil on a cookie sheet and arranged them on the sheet.  You can also sprinkle some salt on if desired. I did!

Then I baked them at 350 for like 10 mins or till they were crispy and brown.

Step 2 - Put On The Hot Goods

Now that the chips are toasted it's time to put on the tasty toppings.

First off I needed to make my beans.  I love some dehydrated beans I have for my food storage.  Just mix 1:1 ration of beans to water and heat.  Makes some tasty beans!  You can use any kind of beans you like.  The ones from the can work well too.  I would recommend adding a bit of water to them to make them less thick if you go that route.

Next I had some left over pork from a roast I had made earlier in the week.  So I reheated and shredded it for the next layer.   Just threw it in a pot to heat with some taco seasoning. You could use any meat of your choosing.

Put the beans and shredded meat on each chip, then top with cheese.

Now throw them back in the oven for a few mins to melt the cheese.

Put them on a plate to get ready to load them up!

Step 3 - Put On The Cold Goods

Now you can add any other toppings you prefer like, lettuce, onion, tomatoes, avocado, corn, and sour cream.  You can add anything you like.

I like to put some sour cream into a sandwich bag and cut the corner to easily put it on top...

Step 4 - Eat And Enjoy

Once complete, all you can do is eat and enjoy them.  Man are they delicious!!!  The great thing is each chip is loaded perfectly and take longer to get soggy.  Nachos are so tasty and so easy to make.  It's one of my go to snacks or meals :)
