Tasty Tuesday - Spooky White Chili Halloween Edition

So this white chili is super easy to make and delicious!  It has just a few ingredients and is very little effort to make.  Basically you cook some chicken and mix some beans and seasoning in with it.  It is always a hit with my family!


Ingredients:
  • 3 Chicken breasts
  • 2 qt chicken broth
  • 2 cans garbanzo beans
  • 2 cans kidney beans
  • 2 cans pinto beans
  • 1 cans black beans
  • 1 cans red beans
  • 1 medium onion (chopped)
  • 3 garlic cloves (minced)
  • 1/2 tbsp salt
  • 1 tbsp Mrs Dash
  • 2 rosemary stems
  • Pepper to taste
You will need at least a 6 qt crock-pot for this recipe. 

Step 1 Cook The Chicken
So first of you need to just cook the chicken in a crock-pot.  I like to just use some frozen chicken breast because its really easy to shred later.  With bone in chicken you will get more flavor but is a lot more work to pull the meat off.  So just put the chicken breasts in a crock-pot along with the chicken broth, onion, garlic and rosemary. Cook on medium for 3-4 hours or until it falls apart easily.  

Step 2 Shred The Chicken
Once cooked remove the chicken and shred it. You can use a fork in a bowl or I just throw it in my Kitchenaid mixer and it shreds it in seconds (cannot do with bone in chicken).  At this point remove the rosemary stems from the crock-pot before you put the shredded chicken back into the crock-pot with the broth.

Step 3 Add The Beans And Seasoning
Now that you have the chicken cooked and shredded in the crock-pot, all you need to do is open all the cans of beans, strain them, and pour them into the crock-pot with the shredded chicken and broth.   Next add the salt and Mrs. Dash seasoning.  I would go easy on the pepper as it can get spicy quick when cooking soups. So use sparingly. But perhaps that is what you are going for.  Finally give it a  good stir to mix it all together.


Step 4 Let It Cook Some More
So just leave your crock-pot on medium and let it simmer and cook for another 30 mins to an hour so all the flavors can blend well and soften the beans some more.  You can taste it from time to time and if more seasoning is needed, just add some Mrs dash and/or salt to your taste. Then it is ready to eat.

To make this spooky, we just got some eyeballs and a rat from the dollar store and washed them really well.  You can just put them in the dish and make it look like spooky guts.
